The GS-95 is made for harder cheesesas it has a shorter stompier blade and is good for use with cheddars and parmesan. It is still a universal cheese knife and can be used for any kind of cheese. The holes on the blade make it easier to separate the cheese from the knife and the two prongs on the front of the blade can be used for serving.
